The Whistler Dark Symphony Irish Whisky is aged for 4-years in first fill ex-bourbon barrels for the body and warm flavors and finished in casks holding VSOP Cognac which were lightly shaved and toasted for 90-minutes to pull spices plum and candied notes from the Cognac influence. The whiskey starts with a thickly textured plum baked orange brown sugar and caramel with a slowly growing spice presence drifting into bourbon biscuit hazelnut espresso burnt sugar and creamy milk chocolate. 91 points by Whisky Advocate.
